Preparation:

  • Cut the mushrooms and garlic into slices, dice the shallots.
  • Fry shallots and garlic in a pan with olive oil and a pinch of salt for about 2 to 3 minutes.
  • Add the mushrooms and let them boil. Add the tomato paste, balsamic vinegar, thyme and the chilli flakes. After 2 to 3 minutes, add the white wine and simmer for another 2 to 3 minutes.
  • Put tagliatelle on and cook al dente. Then pour off.
  • Add the tagliatelle to the pan and mix with the sauce.
  • Season with spices and serve on a plate with Parmesan cheese.

Autumn Dish #2: Fruity pumpkin soup

Pumpkin soup is a classic in the fall, but never loses its sophistication. Therefore, it belongs to the menu at least once in the colorful season. In this recipe, the pumpkin soup is accompanied by a fruity note.

Ingredient:

  • 1 Pumpkin
  • 1 Apple
  • 200 g of onions
  • 30 g butter
  • 1 tbsp sugar
  • Salt and pepper
  • 3 tbsp white wine vinegar
  • 400 ml vegetable stock
  • 8 Basil leaves
  • 8 Slices of baguette

Preparation:

  • Cut the pumpkin, remove the seeds, free it from the hard shell and cut it into slices.
  • Dice the onions, peel the apple and cut into slices.
  • Lightly fry the onions in the butter over medium heat for 2 minutes.
  • Add the pumpkin, apples and sugar and season with salt and pepper.
  • Pour liquid ingredients and 500 ml of water to it.
  • Simmer for 20 minutes.
  • Cut baguette.
  • Finely puree the soup and arrange it on soup plates.
  • Garnish with basil leaves and serve with the baguette.

Autumnal Dish #3: Roasted Chestnuts

  • 500 g chestnuts

Preparation:

  • Preheat the oven to 200 degrees top/bottom heat (circulating air: 180 degrees).

  • Roast for 25-30 minutes.

Preparation:

  • Bring milk to a boil in a saucepan.
  • Stir in rice pudding and add sugar.
  • Simmer for about 30 minutes. Stir occasionally.
  • Wash, core and quarter the plums.
  • Bring to a boil together with grape juice in a saucepan for a short time and add the cinnamon. Simmer for about 5 minutes.
  • Arrange the finished rice pudding on a plate and spread the plum compote over it.
